Christmas in July: peanut butter goodness

One thing I LOVE about Christmas are all the yummy treats! Everywhere you turn there's something new to try.

I've been wanting to try my hand at "Buckeyes" or peanut butter balls for a while. They are one of my absolute favorites! As I was making a treat for Josh's 30th birthday (Reese's cupcakes) I realized how easy these suckers are to make!

AND you can freeze them. Which means you can whip up a couple batches in the summer (they require NO baking- so no hot oven) and you are half way done with your recipe come December!

I found this recipe on Pinterest (Six Sisters' Stuff) and it was SUPER easy and the peanut butter balls are SUPER delicious. This was the only recipe I could find that didn't require condensed milk or shortening (neither of which I had on hand). 
You need: 16oz. peanut butter, 3/4 cup butter (softened- mine was already pretty soft), 3/4 cup brown sugar, 3 3/4 cup powdered sugar. THAT'S IT!

I whipped it up in my Kitchen Aid mixer and pretty soon I had this:
I will say it is pretty tedious to roll all the balls...

so I set up the iPad and tuned in to the TODAY show :)
I froze them right in that glass dish (covered with plastic wrap) and then transferred them to a ziploc bag. They'll keep until the holiday season and it'll be one less thing to do!
